OKemo's Coleman Brook Tavern Announces New Affiliations

Under the management of Culinary Director Ellen Demers and Executive Chef Scot Emerson, Okemo Mountain Resort’s Coleman Brook Tavern has become a member of the Vermont Fresh Network and the American Culinary Federation.

The Vermont Fresh Network encourages farmers, food producers and chefs to work directly with each other to build partnerships. Building these regional connections contributes to stronger local communities and their economies. Through their website, vermontfresh.net, members hope to educate the dining public about the wholesomeness, nutritional value, freshness, and safety of Vermont grown foods, as well as the economic impact of supporting local businesses.

“Ellen and I began to design and implement the CBT “Farm to Table – Dock to Table” program last spring,” said Chef Emerson. “With the desire to provide our guests with a memorable dining experience, we set off on an adventure to develop relationships with people, businesses and organizations of the highest quality.”

The American Culinary Federation, a professional organization for chefs and cooks, was founded in 1929. The ACF is an organization based on promoting the professional image of American chefs worldwide through education of culinarians at all levels. ACF is the culinary leader in offering educational resources, training, apprenticeship and programmatic accreditation designed to enhance professional growth for all current and future chefs and pastry chefs. In addition, ACF operates the most comprehensive certification program for chefs in the United States. ACF is home to ACF Culinary Team USA, the official representative for the United States in major international culinary competitions, and to the Chef & Child Foundation, founded in 1989 to promote proper nutrition in children and combat childhood obesity.

“The ACF is not only the largest and most respected group of culinary professionals in the world, they are also one of the most civic-minded international organizations,” said Chef Emerson.  “As a member, we have access to resources that are simply not available to us from any other source.  And, we are now partners with other professionals with similar interests and experiences from around the world.”

Coleman Brook Tavern is located in The Jackson Gore Inn at Okemo Mountain Resort. CBT redefines the word “comfort” for couples and hungry families. Diners of all ages recognize the restaurant’s elegance, but experience a level of ease with a restaurant that isn’t too stuffy for a dessert that comes complete with graham crackers, slabs of chocolate, marshmallows, skewers and a tabletop campfire for creating gooey S’mores. Coleman Brook Tavern’s Wine Room, for grownups only, offers an ambience that surrounds diners with a display of fine vintages.
